I grind the grain into flour;o) It’s one you can’t do without a flour grinder, because it’s so tiny and hard as rock. 1/4 c per 1 c brown rice/tapioca flour blend makes a nutty flavor for banana breads and banana or squash pancakes. I can buy the grain for $2.99/lb, but the packaged flour costs $6.99 . . . this one went a long way toward justifying my flour grinder.
I’d include this in a blend of other grains for porridge, but not by itself.
How do you use the amaranth besides for chicken treats? I’m interested in trying to grow some gluten-free grains, and the boys love amaranth.

Heather – I just throw the whole head in – they LOVE it. Just like sunflowers, hang them to dry upside down for winter snacks.
How do you cook amaranth so the boys like it? I’ve tried it for b’fast porridge, etc, and it always comes out a little gooey…
