i make a similar dessert using plain yogurt instead of milk/cream and the fruit is added halfway through the cooking. but with big chunks of fruit like the peaches you have used, i guess it’s better to do it your way so that the fruit is caramelized and tender right through. i love how the dough bubbles over the fruit. i have tried frozen fruit too, resberries, pitted sour cherries and apricots.
